Crock Pot Recipes

Chicken Fajitas
Add a layer of sliced red pepper, yellow pepper and green pepper
Add one sliced onions (yellow or purple- whichever I have in pantry)
Put 4 boneless skinless chicken breasts layered in the bottom of the crock pot
Add one can of Chicken Broth
Add sliced red pepper, yellow pepper and green pepper
Add one sliced onions (yellow or purple- whichever I have in pantry) on top of chicken
Sprinkle the top of all items with Cumin powder.

Cook on low.
Soft taco's with flour tortilla,  sour cream, mexican cheese blend, salsa and ranch dressing.
There are low carb tortillas or lettuce wraps to keep it low carb.

Chicken Fajaita Soup leftover ( from above recipe)
In a sauce pan, melt butter and sautee onion and garlic. Sprinkle a TBS or 2 of flour into the melted concoction until it thickens. Continue stirring. Slowly add heavy whipping cream and continue to stir. Add remainder of the combine juices, peppers, onions and chicken from your left overs. Bring to a boil and then reduce to a simmer. (add additional chicken if necessary.) Serve with a dollop of sour cream on top.

Beef and Broccoli
Add to crock pot lean cut strips of cheap cut of beef, or leftover sirloin. Add 1 cup of water and Lawry's Garlic and parsley blend. Cook on High throughout the day. When you get home or 1 hr prior to serving, skim 1-2 cups of juice, add corn starch, and whisk until thoroughly mixed. Add back into crock pot with meat. Add package  or 2-3 cups of Broccoli.  I add Lawry's Garlic and parsley salt (low sodium yet full of flavor) Let mix and cook for 30-40 minutes.  Serve over Rice, quinoa or by itself.

Beef Stew
Add 1 cup flour, black pepper, Lawry's garlic and parsley seasonings into a zip lock. Toss stew meat in flour and seasonings.  ( shake and bake!) Add veg or Olive oil into a skillet. Brown stew meat in the skillet until slightly brown on all sides. Remove meat and add into crock pot. Add 1 can beef stock or 1-2 cups water.  Back to skillet, add onion, garlic, and celery with 1/ 4 cup water. Sautee all items until golden or clear while "cleaning" skillet. Add all mixture to the crock pot. Add 1-2 cups mini carrots. Add 3-4 diced potatoes. Season to taste. Cook on LOW for the remainder of the day.
( if needed, thicken 1-2 cups of juice with 1-2 TBSP corn starch and add back into crick pot.) Let cook 1 hour on until thickened. * freezes well

Chili Con Carne
In skillet, brown 1-2 lbs lean ground beef with diced onion, garlic and 1-2 TBSP cumin seasonings. Let simmer. Drain. Add to crock pot. Add black beans, red beans, or other preferred variety. Let cook in crock on LOW for 5-6 + hours. * freezes well

Pork BBq
Put cheap cut of pork (pork shoulder) in crock pot. Add garlic, Lawry's garlic parsley seasoning, ground cloves, and 1 cup water. Let cook on LOW overnight. Remove meat and throw out all juices. Add fully cooked and shredded meat back into crock pot with finely diced onion and garlic. Add 1 full bottle of Sweet Baby Ray's BBQ sauce back into crock and let cook on LOW for hours and then serve as sandwiches, by itself. *freezes well

Beef, Carrot Herb de Provence
Sautee beef stew meat in a skillet on low with olive oil until lightly browned. Add to crock pot with finely diced carrot and 1 cup water. Completely cover with Herb de Provence. (lavender mixture). Let cook on Low until meat is shredded. For family, serve over rice, quoin, or potatoes. I eat by itself. : )


Other Low Carb creations

Asian Slaw
Take 1 large Sam's club package of shredded cole slaw and add into bowl. Mix 1 cup vegetable oil and 1/2 cup rice vinegar into a mixing cup. Whisk together while blending in 3-4 splenda packages and salt to taste. Pour over slaw and mix throughly. Crunch 1 pkg chicken ramen noodles, open and remove seasoning package and throw away then spread broken noodles entirely over slaw.  Mix well. Add additional slaw and continue to mix. Let sit overnight for best result. 

3 Cheese Dip
1 pkg shredded cheddar cheese
1 pkg shredded mozzarella cheese
1 pkg shredded swiss cheese

Mix all 3 varieties into a large bowl. Add 1 cup Hellmun's REAL mayonnaise. Toss and Mix. Add Lawry's steak seasonings to cover top entirely (1 TBSP) . Mix throughly. Let sit overnight. Serve with Summer Sausage.

Cheap Chicken
Package of Drumsticks and Thighs. Remove from packaging and add into pyrex pan. Add 1 bottle Italian salad dressing over chicken and let marinate in fridge. Remove chicken and add to different cooking pan covered in PAM cooking spray. Cook on 350  for 1 hour.

24 hour salad
Add in layers to a large bowl or storage container:

Head of iceberg lettuce - sliced and disced
1 # cooked crisp bacon
8-10 hard boiled eggs, sliced
1 bag frozen, now thawed peas
1 bunch green onions sprinkled throughout
Pinch salt, Pepper and splenda if so desired.
Top with HELLMUN's REAL MAYONAISE spread over to seal

Let sit in fridge 24 hours then toss and serve.
